Making Akamu Meal

​​​Akamu, called pap in English is processed from maize or Guinea corn or millet or a combination of either two or all of them.
Raw pap
Akamu as is generally called in soutthern Nigeria and kwókwó in the northern part of the country is easy to make.

It takes roughly 30 minutes from when you put water on fire to boil, to get the pap meal ready for consumption.

It is indeed a simple and quick meal to prepare.
The raw pap mixed with cold water to form paste
Take the quantity of the raw pap as desired and put in a clean plate and add small amount of water and steer until it becomes a watery paste.
Boiled water
When the water has reached boiling point, remove from fire and pure gradually into the pasty pap and turn the pap simultaneously with a spoon until the pap solidifies to your desired state.

While some people prefer their pap in a very solid state, other people want it light.

If you belong to the latter group of people, all you have to do is to continue to add the boiled water to it until you reached the desired state.

The pap meal is ready for consumption alone.

But most times, it is taken with a sweetener and an accompaniment - and they are many to choose from!

You can take pap with sugar (this site does not promote chemicalised(artificial) items. Sugar is only mentioned here because sugarcane is its primary source) alone.
Honey
One can also add honey. Another sweetener is called azézé in Ivie language (A story on azézé will be published in the near future).

Pap is basically a breakfast meal that can go with bean cake (akara) or moin-moin - separate stories on akara and moin-moin will feature much later on this site.

However, during the yearly Muslims' holy month of Ramadan ( fasting), most Muslim families drink pap to break fast in the evening.

It can also be taken along with cooked beans with added fried plantain (dódó) or taken with cooked beans alone or with dódó alone.

Another accompaniment that goes well with pap is fried potato.

Fried yam alone or garnished with eggs is another tantalising companion of pap meal.
